My mom's best friend told me about this recipe years ago and I have rarely made grilled cheese any other way. I made these for a cheer team dinner a few weeks ago, along with a big bacon ranch salad, and decided to take the recipe one step further and saute a few cloves of garlic in some melting butter.
Ingredients
- 1 package (3 ounces) cream cheese, softened
- 3/4 cup mayonnaise
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 1 cup (4 ounces) shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/8 teaspoon seasoned salt
- 10 slices Italian or sourdough bread (1/2 inch thick)
- 2 tablespoons butter
- 3 garlic cloves; smashed
Directions
- In a large bowl, mix cream cheese and mayonnaise until smooth. Stir in the cheeses, garlic powder and seasoned salt. This can be done a day in advance and stored in the fridge.
- Spread five slices of bread with the cheese mixture, about 1/3 cup on each. Top with remaining bread.
- In a skillet over low heat melt the butter with the smashed garlic cloves for 3-4 minutes. Pour the butter and garlic into a small bowl. Use a brush to spread the melted garlic butter onto each side of the sandwiches. Using the same skillet from the garlic butter, toast sandwiches for 4-5 minutes on each side or until bread is lightly browned and cheese is melted.
