I almost just called this "cheese" salad since it has three kinds of cheese, but I am guessing that does not sound quite as appetizing.
Fresh Mozzarella Salad
- 2 large heads of romaine; chopped
- croutons
- 1 cup diced fresh mozzarella
- 1 1/2 tablespoons freshly grated parmesan cheese
- 2 ounces goat cheese; crumbled
Dressing
- 2 tablespoons red wine vinegar
- 2 teaspoons sugar
- 1 teaspoon dijon mustard
- 1/2 small shallot; minced
- 1/2 cup extra virgin olive oil
- sea salt
To make the dressing combine the vinegar, sugar, mustard, pinch of salt and shallot. Stir continuously while drizzling in the olive oil until the dressing is emulsified. You will need about a third of the recipe to dress the salad, so you'll have plenty leftover to use later. In a large bowl, combine lettuce, croutons and the three cheeses. Toss with a generous drizzle of dressing.
