Ingredients
- 2 bags broccoli slaw
- 1 medium apple; diced small
- 1/2 cup crumbled feta cheese
- 1 cup honey almond slices
Dressing
- 3/4 cup of mayonnaise
- 1 1/2 teaspoons dijion mustard
- 1 tsp cider vinegar
- 1/2 shallot; finely diced
- 1 1/2 tablespoons honey
- 1 teaspoon sugar
- 1/4 teaspoon salt
In a small bowl mix together all dressing ingredients. In a larger bowl combine, broccoli slaw, apple pieces, and feta. Pour some dressing over the mixture being careful to coat, but not drown the slaw. You might not use all the dressing. This can be made a couple hours in advance, but reserve the almond slices to add right before serving or have in a small bowl on the side to sprinkle on individual servings.
