- 2 onions, thinly sliced
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 8 oz cream cheese; room temperature
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup grated parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 1/2 cups shredded gruyere cheese
Melt butter in a large sauce pan and add sliced onions. Sprinkle with salt and sugar and cook over medium low heat, stirring often, until onions reduce down significantly and turn a deep brown. This often takes over 30 minutes. Remove onions from pan, draining any remaining fat/liquid and set aside to cool. Using a large spatula mix together softened cream cheese, mayonnaise, sour cream, parmesan cheese, mozzarella and half of the gruyere with the cooled caramelized onions. Butter or spray a casserole dish with cooking spray and pour in dip. Sprinkle remaining 3/4 cup gruyere cheese over the dip. Cook at 350 degrees until hot and bubbly, around 25 minutes. You can turn on the broiler for a couple minutes at the end to really brown the top. Serve warm with torn up bread or tortilla chips.
